Ingredients:

1 duck

Accessories:

Cooked pork fat 55 grams, cooked lean ham 10 grams

Marinated duck ingredients:

3 g salt, 3 g sugar, 20 peppercorns, 15 g ginger pieces and 15 g green onion (wash and put into a bowl and crush the juice for later)

seasoning:

MSG 1.5 g, sesame seeds 50 g, peppercorn powder 1 g, coriander 9 stalks, 4 eggs, dry starch 50 g, flour 50 g, refined salt 5 g, peanut oil 1000 g

Dipping sauce:

100 g hoisin sauce 10 g sesame oil

method:

1: Mix the marinated duck ingredients in a bowl of green onion and ginger, and chop the ham into small pieces. Cut the fatty meat into thin strips. Take another bowl, 2 eggs and 2 egg yolks into the bowl, add 10 grams of flour, 10 grams of dry starch, 35 grams of water, 2 grams of salt, 3 grams of sugar, 1 gram of pepper powder and stir well to make an egg paste. Parsley is picked and washed.

2: Steam the duck marinated two hours in advance until it is 80% rotten, cut off the head and limbs after coming out of the pot, extract the duck bones from the inner chamber, and cut the meat at the legs and breast into strips.

3: Spread half of the egg paste on the surface of the duck skin, spread it on a flat plate that has been greased, put the fatty shredded meat and the shredded duck meat in the remaining egg paste, add MSG and mix well, lay flat on the inside of the duck skin, fry it into the frying pan to make it golden brown, and put it into the flat dish.

4: Beat 2 egg whites to foam, add 40 grams of dry starch, mix well into egg bubble snowflake paste. Spread evenly over the fried duck patty flat and sprinkle with sesame seeds and minced ham.

5: Add peanut oil in the wok, heat to 60%, add the duck patty smeared with egg bubble snowflake paste and slow fry over medium heat, and at the same time use a spoon to scoop the oil to pour oil on the surface and fry, until the bottom layer is golden brown, take out the decanting oil.

6: Cut into 5 cm long and 2 cm wide strips, arrange them neatly on a plate, surrounded by parsley, and serve with dipping sauce.
