Golden citrus sauce

Ingredients: 6 oranges, 2 oranges, 1/2 lemon, 100 g rock sugar, fruit vinegar to taste, a little cream.

Directions: 1. After removing the seeds and white fibers from the orange pulp, cut into small cubes and put them in a container.

2. Juice the oranges and lemons, put them in step 1, add rock sugar and let stand for 30 minutes.

3. Take a small pot to melt the cream on low heat, then add the juice from step 2, cook on high heat until boiling, turn to medium heat and continue to cook, when cooking, keep stirring and removing the bubbles on the surface.

4. After cooking for about 30 minutes, half of the original amount remains, showing a thick consistency, you can turn off the heat and set aside. When cooled, add a little fruit vinegar. Golden citrus sauce is suitable for all kinds of salads.

Date jam

Ingredients: 1000 g dates, 250 g rock sugar, 500 g maltose, 30 g lemon juice, a little salt, a little cream.

Directions: Wash the dates and put them in a basin, add salt and let stand for 30 minutes, rinse and drain and set aside.

Take a pot of water, boil and blanch the dates, drain, cut into 4 small pieces and remove the seeds.

Take another small pot, add cream, date cubes, rock sugar, maltose, lemon juice, cook over medium-low heat until the sugar melts and become syrup, then turn to low heat and cook until the water is dry and thick (stir constantly when cooking, so as not to burn), cook well and can. Date jam is suitable for pasta and seasoned teas.
