Li Liangui bacon flatbread is a famous traditional snack in Siping City, Jilin Province, which is said to have been founded in 1908 by Li Liangui of Luan County, Hebei Province. Its bacon color brown red, skin and flesh clear, fat but not greasy, thin and not chai, fragrant spleen; flat cake with boiled meat soup oil with flour and spices made, the skin surface is golden, round as a full moon, layer by layer, crispy outside, soft inside, strong flavor, eat with sweet noodle sauce, green onion and mung bean jujube porridge, unique flavor, especially suitable for small businesses.

Process flow: selection of materials - soaking - brine boiling - smoking - finished products

Recipe: 100 kg of pork, 200 g each of cloves, prunes, nutmeg, sand kernels, cinnamon, cinnamon seeds and peppercorns

Operation points: Cut the pork into cubes weighing about 500 grams, soak in water for 6 to 8 hours, put it in a brine pot and cook for about 40 minutes on high heat, then cook for about two hours on low heat, until the skin is soft as tofu, the meat skin is down in the smoking pot, and smoked with sucrose for about 30 minutes.
