The result of this churros recipe test: the taste of the fritters did not smell of ammonia, and the ammonia smell was successfully removed with baking soda. From this churro recipe, I got the ratio of baking soda and stinky powder: that is, the proportion of baking soda should be more than twice that of stinky powder, so as to effectively remove the ammonia smell left by stinky powder to make fritters. Pay attention to the amount of stinky powder, the maximum dosage per pound of flour should not exceed 1 gram, so that baking soda can effectively remove the residual ammonia smell of fritters. The second test of the successful fritters formula, although the baking soda completely removed the residual stinky powder smell of the fritters, I feel that the noodle fragrance of the fritters is not enough, the residual taste of the Angel fritters leavening agent, is a little heavier, in order to make the fritters better taste, I reduced the proportion of Angel fritters leavening agent in the fritters formula from 6 grams to 5 grams, and then the taste of the fritters made by the test is very satisfied, the bad taste of the Angel fritters leavening agent is not left, and the ammonia smell of the stinky powder is not left. Totally to my satisfaction.
