Gao Ping: Excavating the landmark value of "roasted tofu" to help local economic development

The city of Gaoping was the site of the famous Battle of Changping in history, and the Qin general Bai Qi killed all 400,000 Zhao prisoners. The local people have hated Bai Qi for generations, in order to pay tribute to Zhao Jun, who was killed by the pit, they used tofu as meat, grilled it with a fire, mixed with tofu residue and garlic ginger into a "dipping head", which means that the white brain pulp is mashed into mud and eaten with tofu, known as "white meat", and then gradually spread, becoming a local famous food - "roasted tofu", unique to Gaoping City, declared as the intangible cultural heritage of Shanxi Province in 2008.

In order to further tap the brand added value and development potential of Gaoping roasted tofu, the Gaoping Municipal Government entrusted the Gaoping Municipal Catering Association to apply for the registration of the "Gaoping Tofu" geographical indication certification trademark to the State Intellectual Property Office, and at the same time required the market supervision department to give play to its functional advantages, tap the value of landmarks, and boost economic development. Recently, the staff of Gaoping Market Supervision Bureau and the personnel of the Catering Association went to Gukou Village, Nancheng Street Street, to investigate the regional characteristics of Gaoping City's roasted tofu production and the humanistic and historical origins behind it.

At the home of Master Shen Hongcai, the inheritor of the intangible cultural heritage of roasted tofu in Taniguchi Village, the staff recorded in detail the production process of roasted tofu, and conducted detailed understanding of the various links of soybean selection, foaming, refining, initial screening, careful consideration, boiling, point brine, water filtering, pressing, baking, and accessories production in the production process, jointly discussed the protection of geographical indication trademarks and the promotion of brand value, and carefully compiled the management regulations for the use of the "Gaoping City Burnt Tofu" geographical indication certification trademark.
