Old Daxingyuan once produced four catfish kings famous in the catering industry of Jingchu Land, namely Liu Kaibang, Cao Yuting, Wang Xianshan, and Sun Changbi. The braised catfish made by Liu Kaibang, the first generation of "catfish king", was particularly famous at that time because of its exquisite selection of materials and unique methods. He generally only uses about three to four pounds of live fish to make catfish, and the catfish above the Yangtze River is not used, and the condiments and accessories are also very exquisite, and the soup used for roasting catfish is a special chicken soup.
