Four dishes and one soup
This "four dishes and one soup" was a matter after Zhu Yuanzhang became emperor.
Zhu Yuanzhang was dissatisfied with the extravagance of the officials in the DPRK and China, so he entertained the officials with "four dishes and one soup", which were fried radish, fried leeks, two large bowls of green vegetables and green onion tofu soup.
He hinted at the connotation of "incorruptibility" in the courtiers, and also announced that from now on, the courtiers' banquets could only be "four dishes and one soup" at most. Of course, we also know that it is impossible, but the emperor advocates thrift, upward and downward, and the officials below do not dare to be too presumptuous.
Tibetan bread
According to folklore, when Zhu Yuanzhang burned the Qinggong Building, the heroes inside were eating Tibetan cakes.
Because of Zhu Yuanzhang's behavior of rabbit and dead dog cooking, later generations called this kind of cake "funeral flower cake", and later changed it to "hide" because "burial" was not good. Tibetan cakes were introduced to the people by the court and became a famous food in Tianjin.
Stacked lamb
It is said that Zhu Yuanzhang likes to eat mutton, and the imperial chefs in the palace will cook a variety of mutton dishes, but after a long time, Zhu Yuanzhang has become tired of eating these foods, so the imperial chefs try their best to find new recipes.
One of the imperial chefs surnamed Guan used his hometown cauldron to cook mutton, and after the lamb was dismantled, it was stacked with a wooden stick, and finally cut down thinly piece by piece with a knife, and the resulting lamb tasted quite good, and Zhu Yuanzhang was also very satisfied after eating.
When Guan Yu returned home, he made this dish for his relatives and friends, and everyone asked him the name of the dish, and he came up with the name of "stacked mutton" according to the method.
Mansan's hoof bladder
According to legend, Zhu Yuanzhang called the empress, and "pig" also became a word to avoid.
Once Zhu Yuanzhang went to Shen Wansan's house as a guest, Shen Wansan entertained him with pig's trotters, Zhu Yuanzhang deliberately asked him how to eat a whole hoof, according to common sense, it should be cut with a knife and eaten, but if Shen Wansan answered like this, there would be a big crime of disrespect.
Shen Wansan pulled out a thin bone from his hoof and used the bone to cut the flesh, successfully avoiding the trap. Zhu Yuanzhang ate it and felt delicious, asked the name of the dish, and Shen Wansan returned the name of "Wan San Hoof", and since then, Wan San Hoof has become famous all over the world.
Puyang Zhuang Bun
The protagonist of this story is not actually Zhu Yuanzhang. According to legend, during the Hongwu period, a scholar whose parents died lived in his wife's house and was despised by his father-in-law, but his wife was very affectionate with him.
When the scholar went to Beijing to rush for the exam, Yue Chang only let him bring dead noodle pancakes as dry food, and his wife couldn't bear it, so she secretly mixed meat filling in the cake.
Later, when the scholar won the title and faced the saint, Zhu Yuanzhang asked him what his wish was, and he said that he only wanted to eat the flapjacks made by his wife. Zhu Yuanzhang was very curious about the taste of the cake, so he ordered that Mrs. Zhuangyuan be admitted to Beijing.
Madame Zhuangyuan knew that the emperor wanted to eat her cakes, so she made it with wheat flour wrapped in minced meat and green onions, and fried it until it was crispy on the outside and tender on the inside. After eating it, the emperor thought it deeply and gave it the name "Zhuangyuan Bun". With the spread of the people, "Zhuangyuan Bun" evolved into "Zhuang Bun".
