Homemade soup recipe: 1500 grams of pork bones, 1 kg of chicken rack, 2 kg of meat skin.
Ingredients: 15 grams each of Bai Zhi, Shan Nai, Sand Kernel, Nutmeg, Grass Fruit, Cucumber, Huai Yam, Peppercorn, Star Anise, Luo Han Guo, Galangal, Tangerine Peel, Cumin.
Smoking recipe: 50 grams of sugar, 10 grams of tea leaves, 5 grams of peppercorns.
Preparation Method:
(1) The front hooves of the pig are washed and soaked in water for 12 hours (change the water every 6 hours).
(2) Blanch the soup, add 50 kg of water, cook in a pot for 2 hours, and fish out the bone broth.
(3) Start a large bucket of medicine bag, bone broth, add onion and ginger, hang the brine soup, put down the washed pig's front hooves, boil on high heat, and use low heat to marinate for 2 hours and simmer for 2 hours.
(4) Put the grate in the iron pot, add the smoking material, heat the heat until there is smoke, arrange the brine pig's trotters on the grate, smoke for 1 minute until it is colored and take it out (you can cut small pieces with a knife before serving for easy consumption).
