The most famous folk food in Gaoping, Jincheng, is the "Ten Bowls", and Gaoping's roasted tofu is proud, because whether it is a leader or a celebrity who arrives in Gaoping, he must eat a dish that is roasted tofu.
Takanaki tofu is made from tofu with ginger, garlic, tofu residue and cornmeal. The preparation method is to first beat the tofu into a large piece of one inch thick, put it on the iron grate and grill until it is slightly yellow on both sides, then cut it into two-inch square pieces and cook it, and then dip it into garlic paste, ginger juice, sesame oil, and tofu residue. It has the characteristics of delicate whiteness, solidification and hardness, plain and spicy fragrance, and refreshing breath. After the advent of this variety, all those who came to Gaoping, regardless of the size of officials, the level of their positions, the class of merchants, the rich and the poor, had to taste this rare food. During the War of Resistance Against Japanese Aggression, Commander-in-Chief Zhu De and Deputy Commander Peng Dehuai led the Eighth Route Army through Gaoping, and the local people made roasted tofu to comfort their children and soldiers. In 1981, Hu Yaobang inspected the work in Gaoping County and specially tasted this local special flavor snack.
The origin of Takaiaki tofu, roasted tofu has a history of more than 2,000 years. According to legend, in the Battle of Changping in 260 BC, Zhao Kuo was defeated by the Qin general Bai Qi in one fell swoop, and 400,000 Zhao troops were killed by Bai Qi. The cruelty of baiqi aroused the hatred of later generations, so they compared tofu to "white meat", boiled and eaten in boiled water, in order to vent their anger, people felt quite fresh after eating, and had a unique flavor. So "roasted tofu" was passed down in Gaoping. Nowadays, "roasted tofu" is not only popular in Gaoping, but also often uses "roasted tofu" to entertain guests.
