01 Origin of the name

The origin of the name "haggis" is inextricably linked to Kublai Khan's mother.

The story begins with the Yuan Dynasty, when Kublai Khan, the ancestor of the Yuan Dynasty, came to the Central Plains from the Jin Dynasty. While passing through Quwo County (southwestern Shanxi), Kublai Khan's mother, Empress Zhuangsheng, contracted an illness and did not recover.

After several twists and turns, the famous local doctor Xu Guozhen cured the empress dowager. Subsequently, Xu Guozhen became Kublai Khan's mother's favorite imperial doctor.

"One person is favored, the whole family is glorified" is the default law of ancient society. After Xu Imperial Physician was appreciated by the Empress, Xu Imperial Physician's mother, Han Shi, also served the Empress Dowager with her son.

Han is good at cooking and usually likes to study food. Once, han saw that the Mongols ate mutton and ate only meat, and discarded all the sheep in the water. She felt very sorry, so she took the sheep back into the water, washed it, boiled it in a large pot, and then served it with green onions and peppers. This bowl of original delicacy was even praised by the empress dowager after tasting it.

02 Approach
