White Chocolate Whipping Cream【511g】

380 g ...... 35% cream

6 g ...... Gelatin Tablets (200Bloom)

125 g ...... White chocolate

Production:

1. Bring the cream to a boil, add ice water to soak the soft gelatin and mix, then pour over the chocolate.

2. Stir and emulsify thoroughly with a handheld homogenizer, refrigerate for 12 hours, and beat when using.

Honey mousse【454g】

80 g ...... yolk

120 g ...... honey

4 g ...... Gelatin Tablets (200Bloom)

250 g ...... 35% cream (whipped)

Production:

1. Heat the egg yolk and honey in water and stir to 82°C.

2. Add the gelatin soaked in ice water to stir and emulsify, and remove from heat to cool.

3. Add the half-whipped cream to mix well, and inject about 1/2 full into the cylindrical silicone mold.

Honey vinegar gel【121g】

75 g ...... water

25 g ...... honey

10 g ...... Honey vinegar

1 g ...... Agar powder

10 g ...... Caster sugar

Production:

1. Mix caster sugar with agar powder and add it to other liquid materials and mix well.

2. Bring to a boil, remove from heat, let stand until completely cooled, and whip it into an even and supple gel.

Beeswax panna cotta【310g】

275 g ...... 35% cream

4 g ...... Caster sugar

6 g ...... Gelatin Tablets (200Bloom)

25 g ...... beeswax

Production:

1. Melt the beeswax.

2. Mix the cream with caster sugar and bring to a boil, add gelatin and mix.

3. Add the melted beeswax to stir evenly and let it soak for 3 hours.

4. Strain out the beeswax and pour it into the cylindrical silicone mold.

Honeycomb roll【550g】

150 g ...... butter

80 g ...... honey

110 g ...... Caster sugar

120 g ...... flour

90 g ...... protein

Production:

1. Mix the butter with the honey and melt.

2. Add caster sugar, flour and egg white, mix well, and let stand for 1 hour.

3. Pour on a honeycomb silicone mat and bake in the oven at 180°C for 7 minutes.

4. After baking, cut it into a rectangle of 16x12CM, and quickly roll it on the round pipe, pay attention to pressing the joint; If it gets tough, you can put it back in the oven and bake it for 20 seconds before taking it out.
