Why is Jianzhan all the rage?

The Song Dynasty was a period of rapid economic and cultural development in ancient China, and social life showed a trend of popularization, secularization, and human culture. The Song people continued to refine the elegant taste from the details of daily life, paid attention to the pursuit of spirit and artistic conception, and laid the elegant tone for the social life of later generations.

In the late Tang Dynasty, there was a tea ordering method of boiling soup in a tea bottle, putting it in a bowl at the end, and then holding a bottle to pour soup. From the Five Dynasties to the early years of the Northern Song Dynasty, the techniques of ordering tea tended to be complex. As a symbol of the extremely exquisite way of drinking tea, it is known as the mainstream art of tea fighting, which originated in Jianzhou in the late Tang Dynasty and the Five Dynasties, which is a kind of evaluation and competition of tea and tea ordering skills, paying attention to the tea taste, tea aroma and the changes in the tea foam soup flower produced in the process of ordering tea.

Since then, the custom of tea fighting has gradually ascended to the hall of elegance, and first spread in the court and the scholar class, and then gradually penetrated into the people. Because of "white tea, black tea", Jianzhan was highly respected by the literati and doctors, and became the first choice for tea fighting customs in the Song Dynasty. The popularity of Jianzhan is also closely related to the love of Song Huizong. Huizong, who loves literature and art, is also good at the study of tea affairs and building lamps, and once wrote that "snails and fine beads are packed together, and the glass urn is built with buds." The rabbit is even cooking cloud liquid, which can solve the red face and enter the drunken country".

In the first year of Daguan (1107), Huizong wrote "Daguan Tea Treatise", in which the classification and function of Jianzhan were introduced in detail. In the second year of Zhenghe (1112), Huizong cooked Taiping Jiaruigong tea with the rabbit and Huishan spring and gave Cai Jing to drink. In the first year of Xuanhe (1119), Huizong personally ordered tea for the ministers, which was known as "Tianzi cloth tea" in history.
