Material:
Steak 300 grams
Curry powder 3 grams
2 onions
Carrots 50 grams
Pleurotus eryngii 100g
Hongxi mushroom 100 grams
200 grams of mushrooms
100 grams of butter
1/4 shredded apple
Red wine 100ml
Curry cubes 75 grams
Chocolate 15 grams
Seasoning:
Soy sauce 15 grams
Sugar a little
Salt to taste
Black pepper to taste
Method:
1. Finely slice the onion and heat in the microwave for 8 minutes.
Tips: The onion is microwaved first, and then the sweetness will be stir-fried faster.
2. Put a little sugar in a dry pot, fry over low heat until melted, add onions, add butter in 2 times, fry into caramelized onions, then add carrots, apples, curry cubes, turn to high heat and choke in red wine, add 600ml of water and soy sauce to boil for later use.
Tip: Sautéed onions give a caramel feel and are key to providing the sweetness of curry, including carrots and apples to add natural sweetness. Soy sauce is added to Japanese curry, which is the second key to bringing out the flavor.
3. Sprinkle the steak with salt and pepper to taste, put the steak in a dry pan, turn it over after about 1 minute, fry the surface of the beef to bring out the aroma (no need to cook), and then cut into pieces.
Tip: Dry fry the beef first to bring out the aroma and lock in the gravy, which can avoid losing the taste when stewing. It can also be cooked with beef ribs or beef fillets, and it is also recommended to dry fry them first.
4. Put all the mushrooms in the same pot and fry until fragrant, add salt and black pepper to taste slightly, fry until the mushroom moisture comes out, then add butter, cut steak and curry powder and stir-fry until fragrant.
Tips: Only fried curry powder can release the aroma.
5. Then add all the ingredients to the curry pot in step 2, simmer for 10~20 minutes until thick, and add chocolate and a little curry powder to enhance the flavor before cooking.
Tip: Chocolate adds consistency and flavor to curries and is an important secret to deliciousness. It is recommended that the curry be cooked and aged overnight on ice for better flavor.
