4: Cut the yam into small pieces after peeling.
5: Blanch for 3 minutes.
6. Remove the dried water.
7: Add a spoonful of cornstarch
8: Let the yam be evenly coated with starch, as shown in the picture.
9: Put the right amount of oil in the pot, and fry it at 50% of the oil until the surface of the yam is crisp.
10. Fish out the control dry oil.
11: Pour out the oil in the pan and add 50g of sugar
12: Add 20 g of water
13: Bring to a boil over medium heat, then turn to medium-low heat and continue simmering, and stir continuously with a spatula.
14, when the large bubbles gradually become thick and small bubbles, turn off the heat, pour in the fried yam and cranberries (to test the sugar water anti-sand method, you can see my previous recipe "anti-sand taro" method)
15, use the spatula to stir back and forth, and then mix, until each piece of yam is evenly wrapped with a thin layer of granulated sugar, and the sand is successfully reversed.
16. Finish, put out the pot and plate.
