To say that this raw fried bun is not difficult to do, our hometown has a kind of water frying bun method is very similar to it, are hair bread, but our hometown fried bun is mostly vegetarian stuffing, the shape is not round, more like a noodle dumplings.
After many trials, I am now very comfortable making raw fried buns, often kneading some noodles in the evening and frying them freshly in the morning, so that I can eat delicious raw fried buns at breakfast. 【Recipe making process】:
1. First introduce the filling. Pork minced into meat filling, it is best to be fat and lean pork belly or plum blossom meat minced filling, there are fat and lean only fragrant, I use plum blossom meat here, I personally prefer. Chopped meat stuffing mixed with soy sauce, oyster sauce, ginger powder, chicken powder, sugar, according to the clockwise aspect of the stir, there is a good way is to grab, soon the meat filling can be strong, sticky feeling;
2. Wash the mushrooms and remove the stems, then cut them into slices;
3: Boil a pot of boiling water, put the sliced shiitake mushrooms into it and blanch the water;
4: Then cut the blanched shiitake mushroom slices into small cubes, and mix well with the mixed meat filling;
5: Mix the pork and shiitake mushroom filling. Because soy sauce, oyster sauce, and chicken powder are salty, there is no need to put salt separately, and when seasoning, you should also pay attention to the amount, do not let go of more than leading to too salty filling;
6, water mixed yeast powder, and then put the flour into a smooth and soft dough, put in a container, covered with plastic wrap, fermented to twice as large, the inside of the fermented dough has honeycomb holes; if it is kneaded at night when you want to make breakfast, you can knead the dough and put it in the refrigerator for refrigeration and fermentation.
7, the fermented dough moved to the kneading pad, divided into a number of small dough, small dough kneaded round and then pressed flat, and then with a rolling pin rolled into a round cake shape, do not need to roll too thin, slightly thicker and more delicious;
8. Put pork and mushroom filling in the dough;
9, close the mouth, knead into the shape of the bun, the bun of raw fried bun should not be too large, smaller is more convenient to cook;
10, make all the buns in turn, the process of wrapping the dough is also fermenting;
11: Heat a frying pan on a flat-bottomed pan, add cooking oil, turn to medium heat, and put the buns into the pot in turn. The pan for making raw fried buns must be a pan, heated evenly;
12, fry the bun for about a minute, pour water into the pot, and the amount of water can reach half the height of the bun;
13, cover the pot lid and simmer until cooked, the water in the pot gradually heats up, the bun will continue to ferment in the process of heating up, the whole process is about 5 minutes, if the bun is large, the time will be longer, so the bun is smaller and easier to cook; during the period try not to open the pot lid, you can see the changes in the bun in the pot through the transparent glass cover;
14, about five minutes later, the water is basically consumed, and then open the pot lid, the bun skin is white and fat, has been cooked thoroughly, this time the remaining oil at the bottom of the pot began to fry the bottom of the bun;
15, the bottom of the bun is fried yellow, you can turn off the heat out of the pan;
16: Cut some chopped green onions and sprinkle them, sprinkle some cooked black sesame seeds as a garnish, and a delicious raw fried bun will be ready. How about such buns you like to eat?
