Steaming is one of the traditional dishes of Hunan, which is made by taking bacon, chicken and fish in a bowl, adding chicken soup and spices, and steaming it in a pot. When eaten, it is fragrant, salty and sweet, and flexible and non-greasy.

Legend has it that the fame of steaming is related to a beggar. Once upon a time, there was a restaurant in a small town in Hunan, and the owner Liu Qi, in order to escape the debts forced by the rich man, fled to his hometown and made a living begging. One day when he came to the provincial capital, because of the recent closures, people took some of the pickled fish and chickens at home to him. Liu Qi, seeing that it was late in the day and was already hungry, washed the fish, bacon, chicken, etc., added some spices into the steaming bowl, squatted under the eaves of a large household, and started a firewood to steam.

At this time, the large family was eating, and the table was full of guests. After three rounds of wine, the dish has been served, and suddenly there are bursts of strong aromas. The host was busy asking the children what kind of delicacies there were, and they were coming quickly. The boy saw a beggar squatting on the ground, just lifting the steaming steaming bowl lid, ready to be used. The boy didn't say a word, and the steaming bowl on the front end left. Liu Qiyi was in a hurry and followed closely. A guest saw the steaming bowl that had just come out of the oven, and he hurriedly stretched it into his mouth and even said that it was delicious. However, he said that this guest was a local rich man who opened a large restaurant in Changsha City. So he asked Liu Qi's identity in person, took him back to his own restaurant to hold the spoon, and hung up the "Wax Flavor Steaming" dish sign, which really attracted diners from all over the world to taste the fresh. Since then, "wax flavor steaming" has been passed down as a Hunan dish.

《Steamed Taste Production Method》

Wash the bacon, fish, duck, and tofu (you can soak it in cold water for two to three hours), then boil it in boiling water and fish it out;

Sliced bacon and tofu, cut into strips of bacon and duck legs;

Spread the bacon, fish, duck legs and tofu in large bowls.

Heat the pot with oil, add dried chili peppers, tempeh, ginger slices, cooking wine and stir-fry;

Pour the stir-fry over the wax flavor.

Steam for about 40 minutes.

Place the bowl upside down on the plate.
