Ingredients (4 servings):
2 potatoes (300-350g)

Method:
1. Beat the eggs into an egg liquid, then add a little salt and beat well.
2. Peel and wash the potatoes and cut them into thin slices, which are about the thickness shown in the picture, which is easier to ripen.
3. Take a frying pan, put oil in the pan over medium heat, put in potato chips, spread flat and fry fragrantly, add an appropriate amount of salt and black pepper to taste, and take it out for later use after cooking.
4. Put the fried potatoes into the egg wash in step 1 and mix well. Then start another pot, add a little more oil, pour in the potato egg mixture, spread it as flat as possible, and fry until the egg mixture is solidified around it, and the bottom can slide.
5. Cover a large plate, flip the pan over, let the omelet pour on the plate, then put it back in the pan and fry it fragrantly, shape it, and continue to fry for 3 minutes.
