Pixian Douban Co., Ltd. of Sichuan Province raised objections to the inspection results and applied for re-inspection; after re-inspection by Radio and Television Measurement and Testing (Hunan) Co., Ltd., the preliminary inspection conclusion was maintained.

The product in question has been recalled

Sweet noodle sauce through a special fermentation process, its sweetness comes from the fermentation process produced by maltose, glucose and other substances, umami comes from amino acids produced by protein decomposition.

Amino acid nitrogen refers to the content of nitrogen in the form of amino acids, which is a characteristic index to determine the degree of fermentation of fermented products. The higher the index, the higher the amino acid content in the food, and the stronger the umami taste. The unqualified amino acid nitrogen mainly affects the flavor of the sauce product and affects the quality of the product. The National Standard for Food Safety Brewing Sauce (GB 2718-2014) stipulates that the amino acid nitrogen content of brewing sauce shall not be less than 0.3g/100g.

The content of amino acid nitrogen in the sweet noodle sauce is not up to standard, which may be that the product production process does not meet the standard requirements, does not meet the required fermentation time, or the product formula is defective.

On September 22, China Food Safety Network called Pixian Douban Co., Ltd. in Sichuan Province to interview the reasons why the amino acid nitrogen of the company's sweet noodle sauce did not meet the standard and the current health problems in the production and processing links, and a staff member said that the current unqualified products have been recalled, but other problems are not clear.

In the Guizhou Provincial Market Supervision Bureau organized food safety supervision and sampling inspection, 20 batches of samples were unqualified. Unqualified foods involve coliforms, Pseudomonas aeruginosa, amino acid nitrogen (in nitrogen terms) and other indicators. For the unqualified food found by sampling, the Guizhou Provincial Market Supervision Bureau has instructed the local market supervision department to immediately organize verification and disposal, find out the flow of products, and urge enterprises to take measures such as removing and recalling unqualified products from the shelves to control risks; and strictly deal with violations of laws and regulations according to law.
