【Cantonese Cuisine and Cantonese】

Flip through the Cantonese refreshment menu and you'll find some dim sum with interesting names and unknown objects.

Bo Bao is a snack with a high "curiosity index" for out-of-town diners.

Yin Xingtong introduced that thin brace is a traditional food in Canton, just like the northern flapjacks.

The traditional thin brace has two kinds of salty and sweet, sweet filling with peanuts and sugar spread on the surface of the pancake and then rolled it up and cut into pieces, salty filling is generally made of wax flavor, dried shrimp, radish shredded and so on.

As for, why is it called thin brace?

Explain, the main material of "thin brace" is glutinous rice flour dough, put the dough in the pot, use the spatula to beat continuously, forcefully open the dough, thin, and then wrap the filling, so it is called "thin brace".

Bo Bao and Shunde also have historical origins.

It is said that in the past, children in Shunde and other places mostly attended "Bu Bu Zhai" (that is, private schools). One of the many entrance ceremonies is when the father takes the child to the location arranged by the husband, places a piece of pancake made of glutinous rice flour on a chair, and orders the son to sit down.

The pancake sticks to the child's buttocks, which has the meaning of diligent reading, which means "sitting still, walking, and concentrating on reading". This opening ceremony has been omitted, but bopin has become a favorite snack of Cantonese people.

There are also Shunde people who call thin braces "sleeping beds". Every Qingming Dynasty, the Yi people fried the "sleeping bunk" to worship the ancestors, saying that it was to provide a cover for the ancestors who returned home to be sacrificed for instant sleep. The small thin brace reflects the deep ancestral concept of shunde people.

Nowadays, there are many innovative varieties of thin braces, innovating in fillings, including thin braces of red bean filling, thin braces of oatmeal, thin braces of mango filling, etc.

There are also innovations in thin skins, such as adding matcha powder to the main material of thin supports, making matcha flavor thin braces; adding edible bamboo charcoal powder to make bamboo charcoal black braces; and then adding purple potatoes, purple thin braces with purple potato flavor, and so on.
