First prepare the kimchi broth, add 2 liters of water to the pot, add a dried fish head of the Mingtai fish, this fish head is specially used in our local soup, the meat on the Mingtai fish has been made into jerky, if you are interested in tomorrow's fish, you can search on the Internet, and then put in 3 pieces of dried kelp, 3 dried mushrooms, half an onion and half a pear, 5 shallot whiskers, a number of dried peppers, a handful of dried shrimp, a few small silver fish a few peppers, boil these materials, Wait until it is overheated and put in a small piece of radish and live with it for 30 minutes.
The soup that comes out of this step is the key to the whole kimchi, the umami flavor is full of flavor, and after 30 minutes, the ingredients in the pot are removed and only the soup is retained.
