Puff pastry: 110 g flour, 50 g corn oil.
Date paste filling 375 g.
(1) Let's make the oil skin first. Add 150 grams of flour to the basin, 20 grams of sugar to 60 grams of water, stir the sugar until completely melted, and then add to the flour. While pouring sugar water, stir with chopsticks, stir the flour into a flocculent shape, add 50 grams of corn oil, knead into a soft dough, and seal the waking noodles for 20 minutes. Corn oil can be replaced with lard or butter, and the shortening effect will be better.
(2) Make puff pastry again. 110 g flour, add 50 g corn oil. The puff pastry does not require water, so no gluten is formed. The whole puff pastry will be in a relatively loose state, do not knead hard, use your hands to gently dough into a ball. Sealed, set aside.
(3) After the oil skin surface is awake, put it on the board and knead it for a while, knead it smoothly, and do not need to produce a film. feel relieved! Ha doesn't affect the effect at all. Then rub into long strips and cut into 15 small doses, each about 18 grams. Roll all rounds and set aside.
(4) Divide the puff pastry into 15 portions, about 10 grams each. Gently rub the circle and you're good to go.
(5) Take a oil crust, press flat and put on a puff pastry. Then wrap the puff pastry in the oil skin and squeeze it tightly. Press flat again, roll out with a rolling pin into a cow's tongue, roll out on both sides, more evenly. Be gentle and try not to break the oil skin. Then roll up and you're good to go. When all is done, place it neatly, cover with plastic wrap and relax for 10 minutes. The loose dough is more conducive to shaping.
(6) After ten minutes, roll out all the potions vertically once more, roll out the same two sides, roll them into the shape of a cow's tongue, and roll them up. Cover with plastic wrap and relax for another 10 minutes.
