Stewed lamb chops
Ingredients: 500 grams of lamb chops, 2 carrots, 1 green onion (cut into sections), a large piece of ginger (pat loose), a small handful of Sichuan peppercorns, a little coriander (chopped for garnish), salt
Method:
1. Soak the lamb chops in clean water for about 2 hours, during which the water is changed 2 to 3 times;
2. Take out the soaked lamb chops and put them in a pot of cold water, add a few green onions, a few slices of loose ginger and a small handful of peppercorns, and bring to a boil over high heat. After boiling, continue to blanch for a while, skim off the foam, remove and clean;
3. Put the lamb chops into a casserole or pressure cooker, add water, green onions, ginger slices, bring to a boil over high heat, turn to low heat and simmer slowly. It takes about 1.5 to 2 hours to simmer in a casserole, and about 1 hour in a pressure cooker, until the meat of the lamb chops becomes soft and easy to debon.
4. When the lamb chops are almost cooked, add the diced carrots and continue to simmer until the carrots are soft;
5. Add an appropriate amount of salt to taste before cooking, adjust according to personal taste and the saltiness of the ingredients themselves, and finally sprinkle with chopped coriander to add a touch of fragrance to the stew.
